ANZAC Cookies

ANZAC stands for Australia New Zealand Army Corps.  These cookies were developed to be able to send to the army corpsmen during the Second World War.  They do not contain eggs and thereby last longer.  There is no one standard recipe and one’s mother apparently makes the best recipe.  I find that each time I try the recipe, the cookies come out differently but always delicious!

Ingredients

  • 1 stick salted butter
  • 1 1/2 teaspoon baking soda
  • 1–4 tablespoons golden syrup
  • 3/4 cup shredded, sweetened coconut
  • 1 cup old-fashioned oatmeal
  • 1 cup granulated sugar
  • 1 cup all-purpose flour

Directions

  • Mix coconut, sugar, flour, and oats together in a medium bowl.
  • Melt butter, syrup, and 2 tablespoons boiling water.  When butter is melted, turn of heat and add baking soda.
  • Mix wet and dry ingredients together, drop by spoonful onto a lightly greased cookie sheet (or one lined with parchment paper), and bake at 300 degrees for about 20 minutes.

They are very good with the addition of chocolate or butterscotch chips, though not authentic! You may have to visit a specialty store, such as The Pie Store in Watchung Plaza, to find golden syrup.
